RECIPE
Homemade Chicken Taquitos
Ingredients:
3 chicken breasts
1 brick cream cheese, softened
1 packet taco seasoning
1 tsp garlic powder
1 tsp cumin
1 tsp chili powder
salt and pepper to taste
1/2 cup water
1 cup shredded colby jack cheese
flour tortillas
Instructions:
Mix cream cheese, taco seasoning, garlic powder, cumin, chili powder, salt/pepper, and water in a bowl
Place chicken in the crock pot and pour cream cheese mixture on top. Cook on low for 4-6 hours and shred
Add 2-3 spoonfuls of chicken mixture to a tortilla and sprinkle cheese on top. Roll it up and place on a baking pan with parchment paper. Repeat until all chicken is used
Bake at 350 for 10-15 minutes or until tortillas are crispy. Enjoy!

REFLECTIONS
For those of us in the throws of parenting, it can sometimes (or all the time!) feel really hard to keep up with our to-dos. Whether you’re a working mom, stay at home mom, or home school mom - all of the tasks we juggle daily can be all consuming.
If you’re a list person like me, the to-do list doesn’t always help our mental load, because there’s always something to add. Something that has helped me recently is making a separate to-do list each day, separate from my “master” list. This daily list has everything I want to do just for the day, and the items can range from texting a friend back, to completing an important work project, to sending a homework assignment into school. This helps me see what I realistically need to do in one day rather than the entire week/month ahead, and checking all of those boxes before bed is the best!
A friend told me recently that she had so much to do for her business, and in the chaos, one of her six kids asked her to read her a book. She had every reason to say “I’m sorry I can’t right now”, but instead, she put her to-dos to the side and sat down to read the book. She was struck by her daughter’s gratitude, because those five minutes meant the absolute word to her, and she almost said no.
Something I kept thinking about after she shared that story is the importance that little moments can hold for our kids. Sometimes all it takes is five minutes of connection to fill their cup. The newest item I add to my daily list is: say “yes” to a small request from the kids. This is a simple way for us check mark people to remember that taking a few minutes to connect with a child 1:1, even among some overwhelm, is an accomplishment.
