5 Ingredient Healthy Peanut Butter Cups

Ingredients:

  • 1 cup creamy peanut butter

  • 2 tablespoons maple syrup

  • 1/2 cup almond flour

  • 3/4 cup dark chocolate chips

  • 2 tablespoons coconut oil

Instructions:

  • Mix peanut butter, maple syrup, almond flour and form into balls

  • Freeze for about 30 minutes and melt chocolate chips and coconut oil together

  • Dip peanut butter balls into melted chocolate mixture and sprinkle with sea salt

  • Store in the fridge and enjoy!

REFLECTIONS

I often catch myself thinking about what I didn’t do enough of. I didn’t play with my kids enough. I didn’t put enough fruits or vegetables in their lunches. I didn’t volunteer for enough school events.

Something that’s been helpful in combating these thoughts is making “easy deposits.” A note in my daughter’s lunchbox: deposit. Volunteering to send items to school when I can’t volunteer my time: deposit. Smoothies with dinner for some added nutrients: deposit.

If you find yourself thinking about what you didn’t do, take that thought captive and make an easy deposit. I truly believe every parent is doing the best they can with the resources they have available. Let’s talk to ourselves kindly.
